Refrigerated prep units are perfect for pizza shops or establishments that get through a great deal of salad and garnish. They come in a variety of sizes, usually 2-door through to 4-door. Most are refrigerated from below in the main refrigerator and some have an air curtain blowing across the well to keep the items cool. Worktops can be stainless or granite and some have crumb trays to collect spilt cheese which can be re-used. The refrigerated toppings part is either integrated or sits on a shelf above.
