A bain Marie is used to keep items at serving temperature.  They are basically a well with an element in the bottom that can either produce dry heat or put some water in and it becomes wet heat.  Wet well bain maries produce a gentler heat which means food stuffs do not burn to the bottom of the pan if they are left for long periods.
