The Problems Low-Grade Stainless Steel Can Cause In Kitchens

Walk into any well-equipped commercial kitchen, and you will find stainless steel everywhere from the worktops, shelving and sinks to prep tables, splashbacks and equipment housings.

It is the material of choice in professional kitchens because of its durability, ease of cleaning and resistance to corrosion, but not all stainless steel is the same, and using the wrong grade in a commercial kitchen can cause a range of problems that cost money, compromise hygiene, and create real operational headaches.

Understanding the grades of stainless steel and the consequences of using low-quality material helps kitchen operators make smarter decisions when specifying or purchasing equipment.

What Is Stainless Steel Grade And Why Does It Matter?

Stainless steel is an alloy of iron, carbon and chromium, with additional elements like nickel and molybdenum added to enhance specific properties. The stainless steel grade refers to the specific composition of the alloy. Different grades will behave very differently in a commercial kitchen environment.

The two grades most commonly found in commercial kitchen equipment are grade 304 and grade 316. Grade 304 (sometimes called 18/8, referring to its 18% chromium and 8% nickel content) is the standard for most catering equipment and is well-suited to general kitchen use. Grade 316 adds molybdenum, which provides superior resistance to salt and chlorides, making it the preferred choice for marine environments or anywhere with high exposure to saline or acidic cleaning agents.

Lower grades, particularly 430 and below, contain little or no nickel, which significantly reduces corrosion resistance. Some equipment, particularly imports sold at lower price points, uses these lower-grade materials without making it obvious to the buyer.

The Problems Low-Grade Stainless Steel Causes

1. Corrosion And Rust

The most visible problem with low-grade stainless steel in a kitchen environment is corrosion. Exposure to salt, acidic foods, cleaning chemicals and moisture, which are all constant features of a commercial kitchen, will cause lower-grade material to develop rust spots and surface corrosion over time. This is not just an aesthetic issue. Corrosion creates surface pitting where bacteria can accumulate, making the surface impossible to sanitise effectively and creating a genuine food safety risk.

2. Pitting And Surface Damage

Lower-grade alloys are significantly more vulnerable to pitting corrosion - a localised form of attack that creates small craters in the metal surface. In a kitchen environment, pitted surfaces trap food residue and cleaning products, are very difficult to sanitise and will continue to deteriorate even with careful maintenance. Once pitting develops, the surface is compromised, and replacement is usually the only solution.

3. Poor Weld Quality

Welded joints in stainless steel fabrications are a potential weak point regardless of grade, but low-grade stainless steel is harder to weld cleanly, and weld points are more prone to corrosion and cracking. On a commercial worktop or sink, failed welds create crevices where bacteria and moisture accumulate, undermining hygiene and structural integrity.

4. Difficulty Cleaning

High-quality stainless steel has a smooth, non-porous surface that is easy to wipe clean and responds well to commercial sanitisers. Lower-grade material, particularly when it begins to pit or corrode, becomes progressively harder to keep clean. Staff will spend more time cleaning without achieving the same hygiene standard, increasing both labour cost and compliance risk.

5. Shorter Equipment Lifespan

Commercial kitchen equipment is a significant investment, and the expectation is that it will last for many years with proper maintenance. Low-grade stainless steel equipment simply does not last as long. The cumulative effects of corrosion, pitting and weld failure mean that cheaper equipment often needs replacing far sooner than its higher-grade equivalent, eliminating any cost saving achieved at the point of purchase.

How to Identify the Grade You Are Buying?

When purchasing commercial kitchen fabrications or equipment, always ask the supplier to confirm the stainless steel grade. Reputable manufacturers will specify this clearly. Grade 304 is the minimum acceptable standard for the majority of commercial kitchen applications. For environments with heavy salt use, coastal locations or intensive cleaning regimes, grade 316 is worth considering.

Be cautious of equipment that does not specify a grade, or where the price point suggests corners may have been cut in material specification. The British Stainless Steel Association provides clear guidance on appropriate grades for food industry applications and is a useful reference point.

Investing in the Right Material

In a commercial kitchen, cutting corners on material quality creates problems that cost significantly more to resolve than they saved at the outset, whether that’s constant repair or replacing equipment that simply doesn’t last as long as it should. Specifying the correct grades of stainless steel for your kitchen is not a premium; it is simply the sensible baseline.
